Individual Enchilada Bakes 🔥 full recipe below ⬇️ 

These Chicken Enchilada Bakes were SO simple to throw together and taste like comfort food while still being high in protein and balanced

Makes 4 Servings
Ingredients
•12 oz rotisserie chicken meat, shredded
•1 can beans, drained & rinsed
•1 bell pepper, diced
•½ yellow onion, diced
•1 tbsp minced garlic
•1.5 cups red enchilada sauce
•8 Egglife egg white wraps
•1.5 cups shredded cheese
•Seasonings to taste: ½ Tsp Paprika, 1 Tsp Cumin, ¼ tsp Chili Powder, Salt & Pepper.

Instructions
1. Preheat oven to 375°F and lightly grease 4 individual oven-safe meal prep containers.
2. Heat a large pan over medium heat. spray with cooking spray add the minced garlic, diced onion and bell pepper and sauté for 4–5 minutes until softened.
3. Add the shredded rotisserie chicken, drained beans, seasonings and sauce to the pan. Stir everything together for a couple minutes until warmed through and evenly combined, then remove from heat
4. Assemble each enchilada bake by layering:
 -1 egg life wrap as the base
 -Chicken & beans mixture
 -Shredded cheese
Repeat one more time 
7. Bake uncovered until cheese is melted
8. Allow to cool slightly before serving or storing for meal prep.
