I love reading through old cookbooks to find forgotten recipes. This one has been on my list to bring back to life for a while - and it didn’t disappoint. Crispy and light, just delightful.

Recipe:
Enough for 10-12 mille-feuille. Experiment with other flavour combinations; strawberry and elderflower, miso and maple syrup, beetroot and balsamic, or swap the chives for wild garlic or other seasonal herbs.

Ingredients:
1x Tub of @violife_foods Violife creamy
2x Medium shallots
15g Dried porcini
1x Roll of puff pastry
20g Chives
1 tbsp Lemon juice
1 tbsp Olive oil
Salt
A handful of fresh or freeze-dried edible flowers

Method:
Saute shallots until caramelised, add dried porcini, enough water (or stock) to cover and simmer until soft, then blend. Season to taste. If it’s too thin to pipe, turn the heat back on low and reduce it down - remember that it will firm up a little once cooled.

Combine half a tub of Violife creamy, a small squeeze of lemon, a good pinch of salt and a glug of olive oil. Then whisk vigorously until smooth.

Blend the other half of the tub of Violife creamy with the chives, then pass the mix through a sieve.

Taste each element together to see if you need to adjust the seasoning, then add each filling into separate piping bags.

Unroll the puff pastry onto a tray, topping with parchment paper and another tray. It’s crucial that the puff pastry is cold when it goes into the hot oven - so put it back in the fridge while the oven gets up to temperature. Bake at 200c for 15-20 minutes, or until golden. Cut it into shape while the pastry is still warm, using a serrated knife worked best for me. I went for roughly 65mm x 20mm planks.

Now pipe the mille-feuille three layers high - you may want to adjust the amount of shallot and porcini filling - follow your preference (in testing I added a little more). To finish, garnish with as many edible flowers as your heart desires, and serve immediately.

Crispy pork belly with Esporão Reserva red wine and blackberry sauce. I served it on top of a somewhat liberal take of Migas (meaning crumbs) - a classic dish from the Alentejo region of Portugal, where this wine is made. There’s something special about cooking and drinking from the same bottle - and in my more than humble opinion, a glass of this red went down very nicely with the rest of the meal.

The phrase “slow forward” immediately resonated with me - it challenges the established processes that humanity cannot sustain. Esporão, to my best understanding, is very concerned with sustainability; In its business structure, staying independent and family owned for the past 50 years - and as a leading certified organic producer, helping Portuguese wine continue to grow in popularity around the world.

More and more of us are changing the way we do things - whether by growing our own food, or simply making more conscious decisions on what we buy. It gives me hope.
